The vintage inspired venue of your dreams rolled into Palm Beach recently and it’s one you’re going to want to sample the second 5pm hits.
It’s called Cadillac Supper Club and it’s the work of the clever crew who gifted us Bar Evelyn in 2023. If you’ve ventured down to Coolangatta to sample that little beauty, you’ll know her big sister is the Gold Coast’s new it-girl.
Mark Catsburg and Nick Stanton made the move from Melbourne in a time we no longer need to discuss, having opened several beloved venues there previously.
And while that was no doubt a shame for our Southern friends, it meant we Gold Coasters got to reap the benefits of their return to (world-renowned) Chef Nick’s hometown.
Bar Evelyn, named after Nick’s Mum, was an instant hit thanks to its casual, beachside vibe, exceptional eats and a dirty martini we’d forego everything we’ve ever known for.
Cadillac Supper Club is serving up the same quality of eats a few suburbs north but in a slightly bigger space, decked out exactly as you’d expect from these two.
Found in the space Scottish Prince once occupied, she’s all wooden panelled walls and booths, black and white checkered floors, red velvet seating and (our favourite) a sit-at-the-bar option you don’t often find at Gold Coast dining spots. The first thing you see when you walk in is the crackling fire in the kitchen, which immediately sets the mood. The expansive space is low-lit and moody and the very epitome of (dare we say it again) a vintage inspired dream.
The menu is exactly as you’d expect from the talented duo, Euro-style dishes influenced by American, French and Italian eats with the addition of a charcoal oven for those smokey flavours we love. Of course, the coastal location gets a nod too, with a raw bar section showcasing the freshest of seafood. You’ll know immediately that Cadillac Supper Club and Bar Evelyn are related, the menus are aligned but with personalities all their own.
The ever-changing menu is filled with refined, mouthwatering options. Expect dishes like Charred red pepper dip with cucumbers, paprika oil, sourdough flatbreads, Steak Tartare, Eggplant Parm with red sauce, provolone, fior da latte, basil, olive oil and a Cadillac Burger with 180g Beef brisket/short rib patty, cheddar, secret sauce and pickles on a toasted milk bun served with French fries.
The wine menu is stacked and there are cocktails aplenty, with classics curated to complement the dishes with choices like a Cadillac Supper Club Classic Martini (yes please), a stunning Margarita and a Boulevardier, which is a Negroni made with whiskey that’ll likely change your life. Of course, there’s a vinyl DJ for your listening pleasure on the weekends too.
Three weeks in and the boys are still working on a dessert menu but except new additions along with an ever-changing menu in the future. They’re all about continuing to evolve and we are big fans of that.
The team have created another masterpiece here and let’s hope it won’t be their last.
