With an Insta bio reading, “Welcome to Cowboys – saddle up and get ready to buck me gently!” umm, yeah – attention officially captured.

Cowboys has finally moseyed its way across the ditch from New Zealand to set up shop in Surfers Paradise, bringing a whole lot of wild west spirit with it.

This juggernaut has been winning over Aussie tourists in Queenstown for the past 20 years, so naturally they figured it was high time to ride into Australia’s most famous tourist stomping grounds. Cowboys has only just opened, but it’s already got locals and tourists lining up to let loose for a rootin’ tootin’ good time!

If you have a hankering for American eats in a venue decked-out with all things cowboy, saddle up folks coz this is your kinda place. Imagine an interior that looks like the set of an old Western – with a twist. The visionary build by Woodstar Construction and Helix Group with Macintosh Harris heading up interior design delivers an authentic, rustic vibe…with just enough modern flair to keep it Gold Coast cool.

Nearly all the décor comes straight outta the US (minus the replica guns and bullets – those are all for show), and the atmosphere feels like a big ol’ slice of country America, whether you’re belting out tunes on Sunday karaoke or tipping your hat to the very obliging bar staff.

Cowboys brings the entertainment in spades too in the form of pool tables, shuffleboards, and electronic dart boards. Best of all, there’s no extra charge to play, allowing you save your coins for, say, a second Beergarita (more on those later). Even the famous mechanical bull only requires a gold coin donation, with all proceeds going to charity.

Head Chef Paulo Lapitan has crafted an Americano menu with grunt and epic flavours in equal measure. The star? None other than the “Well Hung Cowboy” – a show-stopping, hanging kebab that’ll have you hollerin’ for more.

Pick your protein (beef, chicken or halloumi), it comes with bell peppers and onion served with fries or mash and your choice of either hot honey or BBQ sauce. And no Cowboys dining experience is complete without a “Beergarita” in hand – the only drink daring enough to wrangle beer and margarita into one glass. Yes, dreams do come true.

As for the mastermind behind this boot-kickin’ joint, it’s hospitality veteran Ingrid B. After decades of seeing Aussies flock to Cowboys in Queenstown, she knew it was high time to give the Gold Coast a taste of what they’ve been missing. And, with a knockout location under the iconic Tiki Village International Resort and an open layout for indoor and outdoor dining, she’s created the perfect spot.

Whether you’re here for a lazy Sunday session, some American-inspired chuck (cowboy slang for meal, not the product of one too many Beergaritas) or a night out with friends, Cowboys has got the space and the spirit to match.

If there’s one thing we never grow tired of it’s a cracking cocktail and lucky for us, the GC is a melting pot of masterful cocktails guaranteed to leave you shooketh.

Whether you’re a local or just passing through, these spots are a must-visit for anyone who loves a tipple (or five), tried and tested by the team because you know, we had to complete our due diligence. From beachy vibes to moody speakeasies, here’s the scoop on where to sip the best cocktails in town.

Rosella’s
Rosella’s has been bringing all things Australiana to bustling Burleigh since January 2019, recently winning the coveted ‘Best Cocktail Bar in Queensland’ gong. And what’s more quintessentially 2024 Aussie behaviour than sipping on a host of sensational cocktails in a beautiful beachy ‘burb?! Serving up nostalgic and native fare, this little ripper hums until late seven nights a week. ‘Knoath!
Our pick: Fantales. Our fave (discontinued) lolly in liquid form. Rosella’s Blend Bundaberg Rum, Mac. Daintree Dark Choc, Mushroom Garum Caramel, Wattleseed Butter – with their very own custom Fantales.

This pint-sized neighbourhood tapas bar proves that good things come in small packages and by good things, we mean cocktails. Forming the perfect pair with sibling Piatto Italian restaurant right next door, line your tum with Spanish style bar bites so that your sneaky cocktail can turn into two…or five….
Our pick: Quattro Bianchi- A citrussy Italian take on the Long Island Ice Tea

If you haven’t stepped aboard The Cambus Wallace, are you even a Gold Coaster? Serving up the finest classic cocktails, international rums and whiskeys, and heartwarming food, the only thing moodier than the dark hues of the boat-themed bar is you if you don’t sample at least one of their tipples. There’s a reason (AKA epic cocktails) that it always gets a nod on our lists!
Our pick: Maiden Voyage #2: Fresh muddled pineapple, Sailor Jerry spiced rum, Brinley coconut rum,  Angostura white rum, fresh lime juice, simple syrup, and tiki bitters.

One of Broadbeach’s laneway treasures, the cocktail list is as impressive as the venue’s arch features, exposed brick, and charmingly textured interior. Phone a friend, your other half, or anyone who appreciates a killer cocktail and we’ll meet you there.
Our pick: Number 42 – Arette Blanco Tequila, Piel de Sapo Tea, Maidenii Classic Vermouth + Lychee Foam. Bitter + Sweet.

Hold onto your highball glasses Gold Coast because Six Tricks is redefining the local distillery scene one cocktail, rum, or whisky at a time (okay, maybe more than one). This two-million-dollar masterpiece is state-of-the-art with a spacious indoor bar and sunset deck perf for sipping the night away – and even a private cask hall! You’ll be left shaken not stirred in the best possible way.
Our Pick: Melon & Lime Highball: Lime Leaf Six-Tricks Vodka, Melon Liqueur, Fino Sherry, Lacto Honeydew, Carbonated.

With a fresh curation of concoctions that could coax Sleeping Beauty herself from her 100-year slumber, this magical albeit not-so-faraway Miami-based fave has earned quite the rap for its bewitching, fable-inspired concoctions. If you’re after something extra spesh that you can’t find at every other cocktail bar, welcome. Extra points for everything from syrups to spirits made on site.

You’ve never met a cooler Evelyn (and if you’re born after 1980 – you’ve probably never met one). This antipasto and pizza bar has not only garnered a staunch following for its A+ seasonal antipasti, sough dough pizza, and freshly made pizza, but also for the evelyn-utionary cocktails. With warm and cosy feels for days (particularly perf this time of year), Evelyn is especially epic on a cool winter’s night.

This little gem at Sanctuary Cove is the gift that keeps on giving. Earning a reputation within its first week as a cocktail connoisseur’s haven, the initial hype has not only endured – it continues to soar. If you’re up the north end (or even if you’re not) – just go.

With a name that (literally) sums up our guilty pleasure, Suga lives up to its namesake – and then some. When it comes to our local speakeasy, the only thing more satisfying than the cocktails is the…no, it’s the cocktails. The low-lit lamps highlight the insanely good menu, which serves as the perfect belly-liner so that you can partake in another cocktail (yes, even on a school night).

Asking us to “find the red palm tree”– challenge accepted! We all know any restaurant or watering hole at The Star Gold Coast never misses a beat and Veladora is no exception. This place is actual cocktail nirvana so take it from us; leave the car at home because you won’t be able to stop at one. Watching the mixologists in action is half the fun and don’t even get us started on the vibe, thanks to Mezcal-inspired speakeasy design.

Catch just a sight of this boutique hotel; it will be enough to broaden your grin and make your tale quiver. What was old is once again new at this boutique hotel, refurbished for our delight. The six-room motel is like a mid-century memento, a nostalgic transport back in time, even just for a night. With a careful curation of genuine era furnishings and colour tones- tangerine oranges, teal blues and pistachio greens- this place feels more like a cosy museum than a hotel. Choose between the impressive Queen Room or Bungalow- visit either you like: they’re both mad! You can find the motel perched on the energised Palm Beach strip, yet hidden in plain sight. Not to worry! Look out for the tall neon sign and cacti-studded wall, and you will be on your way. Grab your Walkman, ladies; we’re headed to the pool deck. We’ll hit The Collective later.

You wouldn’t guess it, but this hotel is pink. Yep! Completely pink (with some white for contrast). We’re not exaggerating (at all) when we say it’s your childhood Barbie Dreamhouse- life-size edition. By all means eccentric, this hotel intrigues and excites. It’s fun, funky, and, surprisingly, a rich piece of Gold Coast history. Simply put, it’s impossible not to have a good time at this hotel. Between the rooftop bar (also the perfect place to watch the spectacular sunset), epic rooms, onsite food delivery (hello, burgers from Eddie’s Grub House) and endless surrounding activities, you will be entertained for your entire stay, and some. Just because we can never resist the siren call, we’ll be scoffing pizza at Franc Jrs.

Welcome to Palm Springs, California. Oops! Sorry, we meant The Mysa Motel. Gosh! Don’t they look alike? It’s no wonder we got confused. The Mysa Motel is a sustainable luxury motel in Palm Beach. Their modern-retro twist is a perfect blend of pastel palette and of-decade decor that conjures a feeling that could only be comparable to being gumball first into a Bubble O’ Bill while rollerblading. Whatever worries you had are long gone now- at the bottom of their outdoor magnesium pool, in fact. Their rooms are a delight, with options for each of your seven personalities. To flaunt a few, we have “Sky Blue’, she’s breezy. With two comfortable king-size beds and sky-blue walls, you’re in for a cool, calm and collected time. ‘The Merillo’- she loves to host. The two-bedroom double-story unit is lush but altogether paired back, to focus on simplicity and the sacred element of ‘space’. For nosh, Well Bread & Pastry is high on our list of recommendations, along with Balboa Italian– it’s buono.

Welcome to Blue Heron Motel; a stunning family-owned boutique hotel in Mermaid Beach’s heart. This understated stay provides a calm and quiet haven to escape the buzzing Gold Coast activity. With a recent spruce, the motel’s design reminds us of the golden days of the Gold Coast. Ahh, what a time! Overall, their bases are covered as both a sanctuary and a centre for activity and exploration. Take a plunge in their picturesque pool, or hire a bike to explore the famous Gold Coast oceanway. After all, you’re only a pedal away from local favourites and attractions, including Pacific Fair and Holliday Coffee.

La Costa Motel is a slice of 60’s inspired paradise. A vintage-style vacation set in the southern Gold Coast suburb of Bilinga. Picture this; you’ve just pulled up in your Dodge Coronet Wagon, hard case luggage in the boot and polka dot togs in hand- ready for your family vacation. The exterior replicates the classic beach-side shack, with each ‘studio’ accommodating its own white picket fence. Behind it sits two vibrant patio chairs, a petite round table and a mini floral garden- the cutest garden we ever did see. Greet your neighbour’s next door before jumping on your cruiser bike en route to breaky! Delicious options await at Halycon Coffee House. As your day draws to a close, head back to your home away from home, pull up a deck chair and watch the sunset from your very own front yard. Well, it’s yours for a little while, anyway.

In that case, we recommend trying Panchos Mexican, for a late lunch or dinner!

With luxurious local amenities and the option of curated experiences, it’s clear, qtQT doesn’t need lessons in laidback luxury.  Unplug and unwind in a distraction-free zone. Whether you’re enjoying solo serenity or sharing space with a loved one, the options are endless. Enjoy barefoot indulgence in an outdoor oasis, free from the distraction of television. It’s all about comfort and connection. You’re in the centre of Surfers, steps away from the QT Gold Coast’s incredible restaurants and yet you feel a million miles away. It’s safe to say this hotel isn’t playing for a bronze medal.

Perched pretty on Level 2, 4 Orchid Ave, Surfers Paradise, Lulu is where Miami’s chic Art Deco scene meets the laid-back tropical charm of the Gold Coast. It’s got a little bit of everything. Think lush greenery, plush booth seating, marble-topped bars, and the kind of decor that’ll make you feel like you’ve just stepped onto the set of Miami Vice, minus the bad moustaches #SorryTom… but also #WhattaMan. With wall-to-wall mirrors and custom-designed wallpaper from local legend Jamie Peters, this $1.59 million venue is a vibe in every sense of the word.

Lulu is set to change the game with its fabulous Frosé Wall – and yes, you read that right (dreams to come true). Mark our words, this masterpiece will be spring and summer’s biggest hit, offering six boozy frosé flavours like Passionfruit Long Island Iced Tea and Frozen Squashie. The cherry on top? Lulu lets you play bartender at the DIY candy station, where you can garnish your icy creation with an array of lollies. Your Insta feed won’t know what hit it.

Hungry? You should be, because Executive Chef Justin Wise has whipped up a menu that’ll have your taste buds busting out ‘Miami’ Will Smith style and don’t tell us you’re too cool coz #anthem. With a global twist on beachside classics, the Lulu Classic Club Sandwich featuring free-range chicken, bacon, kewpie mayo, and gouda cheese is a must-try. Fancy something a little more playful? The Grilled Corn Ribs with paprika butter, parmesan, and chipotle aioli are just the kind of snack you need to fuel those dance moves. And for the skewer lovers, they’ve got Wagyu beef with burnt onion jam and swordfish skewers ripe and ready to be devoured.
