It’s not every day you catch us chimi chimi’ing over a condiment, but here we are. Behind our taste bud tango is El Chori- a local artisan business dedicated to making batch fresh chimichurri sauce. Spoiler alert- their sauce slaps! Trust us, once you try their take on the Argentinian classic, there’s no going back! Like flying first class, only to return to economy- there’s no way. So, what puts the chimi in El Chori’s churi? We’re happy you asked.
From a saucy side hustle to a sizzling full-time gig, husband and wife duo Drew Quinnell & Florencia Petersen began their Chimichurri success story simply nursing a shared love for BBQ and chimichurri. Originally serving traditional charcoal sausage sandwiches with chimichurri sauce at the Manly Sydney markets as a side gig, they soon noticed a real appetite for the condiment among marketgoers. That’s when they decided to move back home to the Gold Coast and give their passion project a red hot shot.
El Chori’s Classic Green Chimichurri is a beautifully bright and tangy condiment that packs a fresh and zesty punch with parsley, garlic, olive oil, red or white wine vinegar and chilli. It goes well with almost anything but is traditionally enjoyed with grilled meats, chicken, seafood and veggies. It essentially does all the work for you, adding an earthy, tangy flavour to perfectly balance the richness of meat or complement any dish.
El Chori takes the classic condiment to a new level, handcrafted with 100% natural ingredients and a stolen Argentinian family recipe (just kidding, shout out to Aunty Celina). You can’t get more authentic than that. It has a unique combination of traditional ingredients that only a true local could balance. It’s delicioso! Be warned, once you start incorporating their chimi into your dishes, you’ll find it hard to live without.
Depending on your fire tolerance, the Smoky Red Chimichurri comes in three heat levels to choose from: mild, medium and hot. The mild has a perfect balance of fresh and natural sweetness- suitable for all palates. The medium (and most popular) keeps all those flavours intact, adding an enjoyable spice kick. The hot, featuring chilli and jalapeno, brings a heat-packing punch and has everything you need to take your dish from bland to hot damn!
One year young and El Chori is stocked in over 80 carefully selected retailers from Byron to Noosa, online, and at the local Burleigh and Palm Beach Markets every Saturday. They focus on supplying premium butcheries, independent grocers, delis, and specialty stores while keeping the spirit of the Asado, fire, friends and food, alive.
