Indulge in a sweet and savory journey this Mother’s Day with a specialty high tea, designed to celebrate the exquisite Mothers. Curated by our pastry and culinary team, the high tea sparks appreciation with the inclusion of local produce resourcefully harvested from the JW Garden.
Raspberry namelaka, lychee compote, rose jelly Yuzu crémeux flower, thyme sable Earl grey Manjari flourless delice Umami choux, Azélia silky crème, hazelnut crunch, salted caramel, coffee craquelin JW lavender honey and white chocolate chip scones with housemade seasonal preservatives and fresh cream.
Smoked salmon rose with pearls, crème fraiche, baby herbs Heirloom tomato, Byron Bay bocconcini, basil pesto Tiger prawn, black caviar, lime aioli sorrel Turkey ham, cranberry cream cheese, cucumber Serrano ham, rock melon, olive tapenade.
