Diet? What diet?! Who has time for that when there are cakes and cupcakes that exist for us to eat! It’s probably also worth noting that Thursday 27 January 2022 is International Chocolate Cake Day (you’re welcome). So here is your sign to treat-yo-self! And to do exactly that, we know exactly where to get your sweet fix! It’s called Kylie’s Cupcakery, and no doubt you’ve already seen it on your social feed. Yep, an entire shop dedicated to all your craving desires. We got to know the famous Kylie Hides, the woman behind the business and the cupcakes.
How long have you been a Gold Coast local?
I have been a local for 24 years and counting.
Tell us a bit about you.
I left school at 16 as I struggled with severe dyslexia and the teachers at the time failed to understand. I started working in kitchens and went to Tafe to become a chef. Now with almost 23 years of hospitality experience and a passion for art, I have combined the two to become a cake artist. I started a cupcake and cake business in a small location on Lavelle Street in Nerang, I outgrew that spot within a year and have now opened a new restaurant in Nerang with a twist. We still make our famous cupcakes, cakes, and desserts but we’ve also expanded to add burgers, wings, popcorn prawns and more as a fun breakfast or lunch venue for families, complete with a cupcake display that holds 500 cupcakes and a kids area.
What makes running a business on the Gold Coast so great?
I have so many lovely families that come in all the time, some of the kids I have made cakes for since before they were born, as in doing their mums baby shower or gender reveal cakes and cupcakes, to now creating cakes for their 1st birthday all the way up to their 6th as I started this business out as a home baker almost 7 years ago. We have such a wonderful local community on the Gold Coast and with everything going on I would like to think it’s made some of us closer.
What’s the creative process behind some of your cake creations?
Every cake is like a painting there is a foreground and background colour palate. I never know the final design until the cake is finished. I can say though it’s 90 percent of what I think about.
How long does it take to create a cake from start to finish on average?
On average 3-4 hours. I make about 15-30 cake orders on the weekends and everything is made fresh so means some days I start any time from 10pm – 3am just to complete that day’s orders.
Currently the creation of cakes are trending on social media. Why do you think this is?
I have built up a social media following from years of hard work and content creation. We also have loyal customers who have followed and supported our journey from our first home business in Carrara, through to the move to Upper Coomera, then we insanely opened a storefront as the pandemic first hit in 2020 to now being in our bigger family-friendly cafe/restaurant venue at 58 Nerang Street in Nerang. I also think people are shocked at how good or life-like something can be and also made out of cake.
If you had to pick, what is your favourite cake/cupcake you offer and why?
I have one, that believe it or not, is low-gluten and vegan, the funny thing is if I tell people that, they are reluctant to try it but once they do they are in love. It’s a rich chocolate fudge brownie cupcake. I don’t have a cool name for it yet, as it’s pretty hard to mix the words brownie and cupcake to sound cool. My second favourite and probably the most popular is a Biscoff and Vanilla Cupcake with Biscoff buttercream.
What does a typical day in your life look like?
I normally wake up about 1-2am, get ready for work and Uber in (I don’t drive, I never have in my life). Turn on the oven and make a Merlo coffee then my day starts. I try to bake as much as I can until I have staff commence shifts from about 6am, they help me ice everything then I try my best to work on my cake orders and back up my restaurant team. Then after we close, I make sure I have everything I need for the next early start. Race home to spend some time with our 2.5 year old son Kaiben before he wants to go to bed. I have been putting in the hard yards to make this business successful so my son can have a better life. I spend every minute I am not at the shop with him and my husband. And after two years of running the business during the pandemic with highs, lows, happy times and moments of thinking it will all come crashing down, I can see the light at the end of the tunnel and it is all paying off!
What do you consider your greatest achievement?
That would be opening during the first Covid lockdown, using our life savings to get the business off the ground, going from a home baker with low expenses to employing staff and having so many overheads, but continuing to improve and grow the business in leaps and bounds, no matter what has been thrown at us. We have adapted to survive with everything that has happened.
How do you define success?
My business has come a long way but it is still far from what I want to achieve to be the success it can be. However, I find success every single time a person or child comes to collect their cake for whatever celebration it’s for and their eyes light up and the excited comments they give back. That’s what gets me through the day, knowing they will remember and tell the story of that cake and celebration for years to come.
How will you be celebrating International Chocolate Cake Day?
The display will be filled with variations of chocolate cupcakes including my signature chocolate recipe plus low gluten, vegan and low-gluten vegan cupcakes. I will also have my chocolate fudge brownies that sell out as soon as I post they are available and I am creating a chocolate cake-shake, which is a cake blended in a thick shake with a chocolate cupcake on top!
What are you looking forward to the most about 2022?
I look forward to competing again in events such as the International Cake Show (in May) held in Brisbane, with lots of international artists now able to come back and compete.

Bar or pub for a drink: The Nerang RSL. I have a special connection with this club, as it’s where I met my husband. The staff and members are all very welcoming.
How do you choose to spend your weekends?
Weekends are my busiest days with some Saturdays and Sundays being 17 hours long working but when Sunday is finally over, I can’t wait to sit at home with our son and play with garbage trucks and watch his favourite movies enjoying family time.
